This vegan and gluten free Cardamom Date Walnut Granola is a delicious breakfast option and a great way to meal prep for the mornings! It’s a little sweet and a little salty, a little crunchy and a little chewy, and is perfectly spiced with cardamom.
Meal Prep – Cardamom Date Walnut Granola!
I am not a morning person, unless it’s the weekend. On weekday mornings I am so slow and find it impossible to get out of bed. Breakfast is the last thing I can think about! I also can’t eat first thing in the morning, so I like to have my breakfast a little later at work.
Often, though, I haven’t prepared any food to pack and I just can’t handle making that decision at 8am. Vegan and gluten-free breakfast foods aren’t exactly the easiest thing to prepare!
Back in the day, vegan yoghurt was hard to come by (or just not very good). And, sadly, I am a granola and yoghurt kind of person, not a granola and milk person. But now, vegan yoghurt is everywhere! And it’s good! And there are different kinds!
I can’t eat the same thing every morning, but I can eat granola and yogurt every second morning! It’s also so easy to eat at work, you just need a spoon (and, of course, a coffee). I put some yogurt in a little jar and pack up some granola in a separate little container, place it in the fridge, and it’s ready to be assembled in the morning!

This recipe comes together fairly quickly – just toss it all together in a bowl and let it do it’s thing in the oven. The only frustrating thing about this recipe are the dates. They can be so sticky!
I used fresh medjool dates in this recipe. I chopped them up, then as I tossed the dry ingredients together, I separated the pieces that got stuck together. I know, extra work! But it only takes a couple minutes and it’s worth it to have the dates in the granola.

This Cardamom Date Walnut Granola is gluten-free, vegan, and delicious! It's easy to make but packed with flavour. Perfect with non-dairy milk or yohgurt!
- 2 cups rolled oats (gluten-free if needed)
- 1 cup walnut pieces
- 6 medjool dates, chopped (about 2/3 cup)
- 1 1/2 tsp ground cardamom
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup

Preheat the oven to 350 degrees Farenheit and line a baking sheet with parchment paper.

Combine the oats, walnuts, dates, cardamom, cinnamon, and salt in a medium sized bowl. Note: the dates are sticky and can be annoying to chop up. Tossing the chopped up pieces in the oat mix covers them a bit, and help you pull apart the pieces that stuck together.

Add the melted coconut oil and maple syrup. Stir well, ensuring everything is evenly covered.

Place granola on the parchment lined baking sheet. Place on the middle rack of your oven and bake for 22 minutes, removing it from the oven halway to stir.

Let the granola cool completely on the baking sheet before you touch it.

When it's cool, store the granola in an airtight container.

I just used cinnamon because I didn’t have cardamom. I love this granola recipe! So easy and tastes great with some Greek yogurt and fresh fruit! I plan to make another batch as soon as this one is gone! Thanks!
