Another year has gone by! Last week was my two-year blogiversary. I said it last year and I’ll say it again, I can’t believe I have actually stuck with this. This blog has turned into such a beautiful form of self-care for me. Getting into the kitchen, learning how to take food photographs, and sharing stories of my life have all been really great for me this year. A really big thank you to those who come and check this lil site out. I know my recipes aren’t anywhere close to perfect, but it’s something that I am constantly working on and I hope that they have at least inspired you to eat vegan!
Like last year, I have decided to round up my top five posts from the last year! I’ve shared some great stuff this year (I hope you’d agree). It’s interesting for me to see what recipes are most popular. I love all the recipes on this list, but there are a few special recipes I’d like to give a shout-out to because they’re ones I love!
My Honourable Mention (1): Apple Tart
I have made this tart so many times! Does anything say warm, cozy, and tasty like apples and cinnamon (and some vegan butter, of course!)? A major delight of this recipe is that it holds together quite well when you cut into it, even when it’s still warm! It’s also less labour-intensive than an apple pie, which makes it a great treat to throw together on a Sunday morning to go with your cup of coffee.
My Honourable Mention (2): Crispy Maple Oatmeal Cookies
These are heaven. They’re crispy and textured and perfectly spiced. Growing up, I thought cookies HAD to have chocolate chips in them, otherwise they were just granola bars pretending to be cookies (unless they were peanut butter cookies, of course). But, I have grown up and now half, if not more, of the cookies I make and eat have no chocolate! Trust me, you won’t be missing it.
Vegan sushi can get boring when your options are avocado, cucumber, and mushroom. Don’t get me wrong – I love me an avocado roll! But, sometimes you want some variety. Some restaurants have great options (Sushi Momo, I miss you), but sometimes it’s fun to make your own sushi at home! Also, cooking with jackfruit is just so much fun.
I drool when I think about croquettes, no lie. Yet, I haven’t had one in years (we’re talking YEARS). I came up with this version. It’s a lot lighter than your regular croquettes, and it’s a nice option if you don’t have a deep-fryer or are terrified of starting grease fires like me. I promise to work on a more ‘traditional’ recipe this year.
If you know me, you know that I try and sneak nutritional yeast in everything. Putting it in salad dressing might be the best possible way to use it. This is the salad recipe that I receive the most compliments on, it seems to be everyone’s favourite! I make this salad often for lunches. I batch prepare everything and just leave the dressing in a small container on the side. I also often throw in a handful of chickpeas if I need some extra protein!
If you go back to the beginning of my blog, you might see a difference in my photographs. I’m still working and learning technique, but two years ago I had no clue what I was doing! When I shot this photo for the fruit crumble bars, I was so in love. This is also a great recipe to share as we’re coming to the end of summer – it’s perfect for using up that extra fruit that is sitting in the fridge!
Muffins! These are at the top of the list for a very simple reason: they’re great! No, I’m lying. It’s actually because Finding Vegan shared the recipe across their social media platforms and it brought a lot of attention to the site (thanks Finding Vegan!). But they are great, I promise!
One last little thing: I have now lived longer as a vegetarian than an omnivore! I am 25 years old, but have been vegetarian officially 13 years as of this August (I went vegan roughly two years after that). Yipee!
