Here is my take on Gluten-Free Vegan Rocky Road Bars! They are packed with chocolate, peanut butter, mini (vegan) marshmallows, and rice Chex! They are no-bake and so, so easy to make! All you need to satisfy your chocolate cravings are a few ingredients, less than 15 minutes of effort, and a tiny bit of patience for chill time.

No, really – they do!
Is there anything better than the combination of chocolate and peanut butter? Uh, yah! Adding mini marshmallows and rice Chex!
The chocolate peanut butter mixture (which also features some coconut oil and corn syrup) gets nice and fudgey when it sets. The mini vegan marshmallows give the bars a perfect chewy element. And, finally, the rice Chex provides a little bit of crunch. The perfect combination of flavour AND texture!
How to make these vegan rocky road bars
The only thing that takes time in this recipe is the dreadful chill time. Isn’t chill time the worst?
If you can build up some patience, I promise the rest will be so easy. Use the microwave to melt the chocolate and coconut oil (in intervals so the chocolate doesn’t burn, of course). Then add in the corn syrup and peanut butter, mix well, pop it in the microwave for another 30 seconds, and give it a final mix.
All you’ll need to do next is mix the chocolate peanut butter mixture with the rice Chex and the mini marshmallows while trying not to just grab a spoon and eat it all out of the bowl. I promise you it tastes better after it chills – it’s worth the wait!
Finally, press it into a parchment lined 9×9 baking dish and pop it into the fridge to chill.
A note on substitutions
I know we all love substitutions. I’m vegan and celiac, I know the substitution game well.
Don’t want to use corn syrup? Try maple syrup. Don’t have coconut oil on hand? Sub it with some vegan butter. No chocolate chips? Melt down a couple bars of vegan gluten free dark chocolate!
I have not tried this, but gluten-free rice crispies would likely be a good substitution for the rice Chex.
You can’t replace the mini marshmallows. And you don’t want to. Buy yourself a bag of Dandies mini marshmallows (or 3) and you won’t regret it.

These vegan rocky road bars are a delicious no-bake dessert! They are packed with chocolate, rice Chex, marshmallows, and peanut butter!
- 3 heaping cups GF Rice Chex (120 gr)
- 1 heaping cups Vegan Mini Marshmallows - I use Dandies (110 gr)
- 1 1/2 cups Vegan GF Chocolate Chips (180 gr, or one bag of Enjoy Life mini chips)
- 1/4 cup melted coconut oil* (60 gr)
- 1/2 cup light or golden corn syrup (170 gr)
- 1 cup natural peanut butter** (250 gr)

Line a 9x9 baking dish with parchment paper. Set aside.

In a large bowl, toss together the gluten free rice chex and the vegan mini marshmallows. Set aside.

In a medium sized microwave safe bowl (capacity to hold 4 cups), melt the chocolate chips and coconut oil. Microwave for 30 seconds, remove and stir, then repeat until the chocolate is melted. Be acreful not to burn the chocolate.

Stir the corn syrup and peanut butter into the melted chocolate. I like to place the mixture back into the microwave for 30 seconds to soften the peanut butter which makes it easier to mix.

When the chocolate peanut butter mixture is well combined, add it to the bowl with the chex and mini marshmallows. Combine so that all the chex and marshmallows are evenly coated. It is okay if the chex break into small pieces.

Place the mixture into the prepared pan. Using a spatula, press the mixture into the corners of the pan and push the mixture down. Again - it's okay if the chex break!

Chill in the fridge for 4 hours or until set before slicing into bars. Store the bars in an airtight container in the fridge.
*Use refined coconut oil if you do not like the taste of coconut oil.
**You can use peanut-butter that has added sugar, but your bars will be very sweet.

I used a chunky peanut butter in the recipe which is why you see some nuts. You can use a smooth peanut butter if you’d prefer not to have the pieces of nuts!
