Friends, we made it. And by made it, I mean we have finally made it to autumn. Scarves, blankets, warm beverages, and of course… pumpkin everything! I am unapologetically in love with everything pumpkin, and I will put it in almost everything. Hummus, chilli, soup, lattes — you name it, I’ve tried it with pumpkin. But I thought I’d bring you a classic to start of the autumn festivities — Gluten-Free Pumpkin Spice Muffins, which are (as always) vegan as well!
(My sincerest apologies to those in Saskatchewan and Alberta, where it has already started to snow. Maybe I’ll post something a little more winter friendly for you soon, hehe)
These muffins are light, fluffy, and deliciously spiced! I think what I love so much about pumpkin baked goods is the addition of all the great spices. I like a good punch of spice in my pumpkin muffins — if you don’t, feel free to lower the amounts to your suiting. You can also use a pre-made pumpkin pie spice mix if you’d like!
How to make Gluten-Free Pumpkin Spice Muffins
These muffins are SO EASY to make! They also use simple ingredients — and only one flour blend! I know I am guilty of using too many different kinds of flours in my recipes, so I tried to keep it extra simple. If you’re using a gluten-free flour blend that already has xantham gum, omit the amount I have indicated.
Start by making your flax egg. While that sits, mix together all the dry ingredients. Then add the remaining wet ingredients to your flax egg. Combine and that’s it!
I like to let my muffin batter sit for about 15 minutes before I scoop it into muffin liners and place it in the oven. I recommend you do this!
These Vegan Gluten-Free Pumpkin Spice Muffins are so light, yet still packed with flavour. They keep fairly well, but, as with all gluten-free baked goods, best if they’re enjoyed within a day or two.

Rosemary Bourbon Apple Cider
- 2 tbsp Ground golden flax seed
- 6 tbsp warm water
- 1 cup sugar
- 1 cup canned pure pumpkin
- 1/2 cup vegetable oil
- 1/2 cup almond milk
- 1 tsp vanilla
- 2 1/4 cups Bob's Red Mill All Purpose Gluten-Free Flour
- 1 tbsp baking powder
- 1 1/2 tsp xanthan gum
- 1 tbsp cinnamon
- 1/2 tbsp ground ginger (powder)
- 1/2 tsp ground clove
- 1/4 tsp ground all spice
- 1/2 tsp salt

In a large bowl, mix the ground flax with the water to make a "flax egg". Let sit for 5 minutes.

In a medium bowl, whisk together all the dry ingredients.

Add the remaining wet ingredients to the flax egg and mix well.

Add the dry ingredients to the wet ingrdients and mix until combined.

Let the batter sit for 15 minutes.

Preheat the oven to 375 degrees Farenheit and line a muffin tray with liners.

Divide the batter into the 12 muffins liners. They'll fill up almost to the top.

Bake in a preheated oven for 20 minutes, or until a knife comes out clean.

Let cool, then enjoy!

Dang, I can’t find the flour. locally (Southern MB). Where do you find it? Any other gf substitutes? Love pumpkin anything too!

I haven’t tried, but you should be able to sub another GF all purpose flour blend with decent success! Maybe try the Bob’s 1-1 if that’s available, I’ve also heard good things about the President’s Choice GF flour. Let me know if you end up trying something! I hope you’re staying safe and warm in this Manitoba storm we’re having!
