Summer is slowly coming to and end and I’m sure most of us (myself excluded) want it to last just a little longer. Thankfully, we still have one more long weekend before it is time to get back into those same old routines. Best celebrate, right?
This fruity summer salsa will be a great addition to whatever summer festivities you have planned for the weekend. It is so fresh; if summer had a flavor this would be it.
I’ve been making this salsa for a while now. I’ve served it as an appetizer before a barbecue and as a snack for game night. I’ve also used it in dishes as a substitute for tomato-based salsas. Sometimes I just eat it right off the spoon.
This salsa is so easy to put together yet it looks and tastes like a lot of work went into making it. Feel free to prep this salsa in advance, but I suggest you wait to chop up the avocados until right before you serve it to ensure that they keep their beautiful colour. Serve with tortilla chips, a glass of sangria, and good company.
