How to make Vegan Gluten-Free S’mores Brownies
These brownies come together quickly!
You first start by making a thick brownie batter, which combines dutch cocoa powder and melted chocolate for a super rich chocolate flavour. Then, you sprinkle more chocolate on top before putting it in the oven.
Five minutes before the brownies are done, you’ll sprinkle the gluten-free/vegan graham cracker crumbs (which you’ll mix with a little melted butter beforehand) and mini vegan marshmallows. Place them back in the oven for a few more minutes, and voila! If you want that gorgeous golden brown colour on the marshmallows (which I do believe makes them taste even better!), put the brownies under the broiler for 1-2 minutes. Watch very carefully though, they can burn quickly!
The absolute worst part about this recipe? You have to wait for the brownies to cool completely before cutting into them, otherwise they’ll be very crumbly. If you let them cool, they slice much better!
Some notes on ingredients
Marshmallows are not vegan and graham crackers are definitely not gluten-free. So you may be wondering what brands I am using to replace these ingredients!
For the marshmallows, I LOVE Dandies. They are so, so tasty and they’re the only marshmallow I ever have in my cupboards!
The gluten-free/vegan graham cracker crumbs may be harder to find than the vegan marshmallow depending on where you live. When I need graham cracker crumbs, I always turn to Kinnikinnick brand. Not all their products are vegan, but some are. Just make sure to read the labels!

- 2 tbsp ground flaxseed
- 1/2 cup unsweetened non-dairy milk (I like Earth's Own GF Oat milk)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup vegan butter, melted
- 3/4 cup chocolate chips, divided
- 1 tsp vanilla
- 1 1/2 cup Bob's Red Mill All Purpose Gluten-Free Flour
- 1/2 cup dutch cocoa powder
- 1 1/2 tsp xanthan gum*
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup Vegan/GF Graham Cracker Crumbs (I use Kinnikinnick brand)
- 1 tbsp vegan butter, melted
- 1 1/2 cup vegan mini marshmallows (I use Dandies brand)

Preheat the oven to 350 degrees farenheit and line an 8 x 8 brownie pan with parchment paper, making sure there are flaps on all four sides. Spray lightly with cooking spray.

In a medium sized bowl, whisk together the dry ingredients.

In a seperate bowl, mix the ground flaxseed with the non-dairy milk. Let it sit for about 5 minutes.

Add 1/2 cup of the chocolate chips (reserving 1/4 cup for later) to the melted butter. Microwave in 30 second intervals until the chocolate is melted.

Add the melted butter and chocolate, sugars, and vanilla into the flax mixture. Mix well.

Fold the dry ingredients into the wet ingredients until fully incorporated. The batter will be thick.

Using a spatula, pour the brownie batter into the prepared pan. Spread the batter evenly and top with the remaining 1/4 cup of chocolate chips.

Bake the brownies for 35 minutes. While the brownies are baking, prepare the graham cracker crumbs by mixing the crumbs with the melted butter.

Remove the brownies from the oven and top evenly with the graham cracker crumbs and mini marshmallows. I like to do half the crumbs, the marshmallows, then top with the remaining crumbs. Gently press the crumbs and marshmallows down.

Return the brownies to the oven for an additional 5 minites. Optional: Broil for 1-2 minutes so the marshmallows get golden brown, but watch out - they burn fast!

Let the brownies cool completely before slicing. If they are not cool, they will be crumbly. Enjoy!
*If you are using a different GF flour blend, omit the xanthan gum if your blend already has it.
