This Vegan Cabbage Sausage Soup is so easy to make, but tastes delicious! The soup is loaded with vegan sausage, green cabbage, potatoes, carrots, and a rich broth. It uses some “secret” ingredients to bump up the flavour, making this meal even more comforting. It’s also gluten-free!
How to make this Vegan Cabbage Sausage Soup
This soup comes together so quickly. I especially love it because it uses some veggies that last long in your fridge. It’s a great soup for those days right before a trip to the grocery store. I think this is especially important right now, when I hope we’re all limiting the frequency that we go out.
I’m a person who loves to have a full fridge and pantry so I can make exactly what my body is craving that day. But I have had to learn to get a bit more creative. Oddly enough, getting more creative has also meant going back to some delicious, but simple recipes.
For this soup, all you need is an onion, some garlic, carrots, cabbage, and potatoes. You can make this with the vegan sausage (Beyond Sausages are my favourite here), which is delicious, but I have also made the soup without them and it’s still very tasty!
All you need to do is fry up the sausages, then the onions, garlic, and carrots. Next you will add the cabbage, potatoes, and broth. That’s it!
Why the Nooch and Tamari?!
Nooch (nutritional yeast) and gluten-free tamari are two “secret” ingredients I use to bump up the flavour of vegan broth. They add a depth of flavour that is often lacking in store bought vegan broths.
I don’t have the fancy language to describe exactly what these two ingredients bring to the table. But trust me! You need to try it.

This Vegan Cabbage Sausage Soup with carrots and potatoes uses simple ingredients, but tastes delicious and makes a super comforting meal!
- 2 tbsp neutral oil, divided
- 2-3 vegan/gf sausages, sliced/crumbled - I always use Beyond Sausages here
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 2 medium carrots, sliced
- 1 tbsp gluten-free tamari
- 2 medium russet potatoes, peeled and diced into 1 inch squares
- 4 cups chopped green cabbage
- 1 bay leaf
- 1/4 cup nutritional yeast
- 5-6 cups veggie broth
- salt and pepper, to taste

Add 1 tbsp of the oil to a large soup pot over medium-high heat.

When hot, add the vegan sausages. I like to use a pair of scissors and just cut pieces of sausages into the pot. Cook the sausages, stirring occassioanly, until browned. About 3-4 minutes.

Remove the sausages from the pot and set aside. If there are little bits of sausage left/stuck in the pot, that's fine! These add flavor.

If needed, add the remaining 1 tbsp of oil to the pot and turn down the heat to medium. Add the diced onions and a pinch of salt and pepper and sautee until soft, about 5 minutes.

Add the carrots and garlic and sautee for an additional 5 minutes.

Now add the tamari, nutritional yeast, and bay leaf and mix well until everything is coated in the yeast.

Add the diced potatoes, cabbage, and the broth. Turn the heat up to medium-high and bring the soup to a boil.

When the soup has boiled, turn the heat down to medium-low and simmer the soup (covered) until the potatoes are fork tender, about 15 minutes.

Add the sausages back into the soup and heat through for 3-5 minutes. Taste the broth and add salt and pepper if needed. Serve and enjoy!

I just made this soup for dinner tonight and it was excellent!! Thank you so much for the recipe.
Of note, although the recipe suggests a 10 minute prep time, this is pretty unrealistic! To chop onion, garlic, carrots, potatoes, and sausage in 10 minutes would require a super-power strength that few would possess. It takes me 10 minutes just to get all of the ingredients together!
That being said, it’s an awesome recipe and it’s going into the keep pile…I’l just count on a little extra time to do the prep.
