It’s summer, which means it’s time for fruity summer cocktails like this Strawberry-Rhubarb Gin and Tonic! I think it’s fair to assume that many of us will be spending more time on our “home patios” instead of frequenting our favourite local restaurants and bar. We’re all having to get a little more creative right now, including with our homemade cocktails!
How To Make the Strawberry Rhubarb Simple Syrup
Making simple syrup is really easy! All you need to remember is 1 – 1, as in, 1 cup of sugar and 1 cup of water. I love having simple syrup around at all time to add into cocktails. Another great thing about simple syrup is how many things you can do with it! In the winter, I love adding spices like cardamom to my simple syrup and using it in Old Fashioneds.
But, it’s summer! And what is more summery than strawberry and rhubarb!
I kept this recipe really easy to remember, based on the 1-1 ratio. The recipe is 1 cup each of strawberries, rhubarb, sugar, and water! You can use fresh or frozen fruit.
After you’ve simmered this mixture, strain the strawberries and rhubarb. You can save these and eat them served on top of yoghurt or ice cream, yum!
Use this simple syrup in cocktails, or with some sparkling water or club soda for a refreshing non-alcoholic spritzer!
Making this Strawberry-Rhubarb Gin and Tonic
Once you have the strawberry rhubarb simple syrup made, this cocktail comes together quickly!
All you have to do is mix together the gin, syrup, and lime juice then top with ice and tonic!
This drink is pretty sweet, so feel free to adjust the ingredients to your liking. Maybe more tonic, or lime juice? Perhaps some extra gin, if you like a booze-forward drink!

This Strawberry-Rhubarb Gin and Tonic is a perfect summer cocktail. Use the recipe for Strawberry Rhubarb simple syrup in other drinks, too!
- 2 oz strawberry rhubarb simple syrup
- 2 oz gin
- 1/2 lime, juice of
- 4 oz tonic
- lime slice, for garnish
- ice
- 1 cup strawberries, fresh or frozen
- 1 cup rhubarb, fresh or frozen
- 1 cup sugar
- 1 cup water

In a medium sized saucepan, combine all simple syrup ingredients. Bring to a boil, then simmer (uncovered) for 20 minutes.

Strain the syrup into a jar. Don't squeeze the juices out of the fruit or you will get a cloudy syrup.

Let cool then store the syrup in the fridge. You can use the leftover strawberries and rhubarb on vegan yoghurt, or on top of ice cream!

In a highball glass, stir the simple syrup, gin, and lime.

Add a handful of ice, then top with tonic. Gently stir the cocktail, moving your spoon around the sides of the glass, until the glass is cold. Garnish with a slice of lime.
