It feels like it is officially summertime! We had a few incredibly hot days here in Winnipeg (high 30s with the humidex!) so I thought it’d be the perfect time to share a new, summer recipe! This Black Bean Corn Salad with Avocado + Tomato is so easy to make, but still so delicious! It’s tossed in a simple lime vinaigrette and, of course, it’s vegan and gluten-free!
Easy, No-Heat Summer Meal
We don’t have air conditioning for our top floor apartment, and let me tell you — it gets HOT. So, in the summer, I am always looking for simple, no-heat meals that are still nutritious and delicious!
This salad is perfect for those unbearably hot days when you don’t want to turn your oven or stove on.
It has protein from the black beans, vegetables, carbs from both the corn and beans, and some fats from the avocado and olive oil in the vinaigrette.
What is in this Black Bean Corn Salad?
Sometimes, the most simple recipes are the most delicious!
This salad is made with:
- Black Beans
- Corn
- Cherry Tomatoes
- Avocado
- Red Onion
- and Cilantro!
The vinaigrette is just as simple! It’s just a little lime juice, olive oil, sugar, and salt.
Meal Prep This Black Bean Corn Salad
This Black Bean Corn Salad is great prepared in advance for lunches or easy weeknight dinners!
I would do everything as instructed in the recipe except for adding the avocado.
The black beans, corn, and tomato hold up well in the dressing while stored in the fridge. But, I personally hate this taste of avocado that has been cut and left in the fridge.
I recommend that if you are meal prepping this recipe, save adding the avocado to the last minute!

This Black Bean Corn Salad uses simple ingredients but is packed with flavor featuring avocado, tomatoes, cilantro, red onion, and an easy lime vinaigrette!
- 1 can black beans, rinsed and drained well
- 2 cups cherry tomatoes, sliced in half
- 2 cups corn - fresh, grilled, or if frozen cooked according to the package and rinsed well with cold water.
- 2 avocados, diced
- 1 cup cilantro, torn into pieces
- 1/2 cup diced red onion
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt

In a large mixing bowl, toss together all the salad ingredients.

In a small bowl, whisk the vinaigrette ingredients until combined.

Add the vinaigrette to the salad and toss well.

Serve immediately or store covered in the fridge until ready to serve.
