This Strawberry-Rhubarb Gin and Tonic is a perfect summer cocktail. Use the recipe for Strawberry Rhubarb simple syrup in other drinks, too!

Ingredients
For the Strawberry-Rhubarb Gin and Tonic
  • 2 oz strawberry rhubarb simple syrup
  • 2 oz gin
  • 1/2 lime, juice of
  • 4 oz tonic
  • lime slice, for garnish
  • ice
For the Strawberry Rhubarb Simple Syrup
  • 1 cup strawberries, fresh or frozen
  • 1 cup rhubarb, fresh or frozen
  • 1 cup sugar
  • 1 cup water
Instructions
For the Strawberry Simple Syrup
  1. In a medium sized saucepan, combine all simple syrup ingredients. Bring to a boil, then simmer (uncovered) for 20 minutes.

  2. Strain the syrup into a jar. Don't squeeze the juices out of the fruit or you will get a cloudy syrup.

  3. Let cool then store the syrup in the fridge. You can use the leftover strawberries and rhubarb on vegan yoghurt, or on top of ice cream!

For the Cocktail
  1. In a highball glass, stir the simple syrup, gin, and lime.

  2. Add a handful of ice, then top with tonic. Gently stir the cocktail, moving your spoon around the sides of the glass, until the glass is cold. Garnish with a slice of lime.
