This Black Bean Corn Salad uses simple ingredients but is packed with flavor featuring avocado, tomatoes, cilantro, red onion, and an easy lime vinaigrette!

Ingredients
For the Salad
  • 1 can black beans, rinsed and drained well
  • 2 cups cherry tomatoes, sliced in half
  • 2 cups corn - fresh, grilled, or if frozen cooked according to the package and rinsed well with cold water.
  • 2 avocados, diced
  • 1 cup cilantro, torn into pieces
  • 1/2 cup diced red onion
For the Simple Lime Vinaigrette
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
Instructions
  1. In a large mixing bowl, toss together all the salad ingredients.

  2. In a small bowl, whisk the vinaigrette ingredients until combined.

  3. Add the vinaigrette to the salad and toss well.

  4. Serve immediately or store covered in the fridge until ready to serve.
