Ingredients
  • 2 cups Bob's Gluten Free All Purpose Flour (or another gluten free flour blend)
  • 1/2 cup oats, ground into a flour
  • 2 tsp baking powder
  • 1 tsp xanthan gum
  • 1/2 tsp salt
  • 1 1/4 cup almond milk
  • 1 tsp apple cider vinegar
  • 1/4 cup aquafaba
  • 1/4 cup neutral oil, like canola
  • 3 tbsp maple syrup
  • 2 tsp vanilla extract
Instructions
  1. Preheat your waffle iron.

  2. Combine the almond milk and vinegar, set aside to curdle.

  3. Sift together the flour, oat flour, xanthan gum, baking powder, and salt in a medium sized bowl.

  4. In a separate bowl, mix together the aquafaba, oil, maple syrup, and vanilla extract. Add the almond milk mixture to the wet ingredient and mix until combined.

  5. Pour the liquid into the dry ingredients. Mix well. 

  6. Grease your waffle iron with some vegan butter or oil. Place 1/4 of the batter into the iron and cook on medium for about 5 minutes, or until golden brown. 

  7. Repeat with the rest of the batter.

  8. Serve with fresh fruit and coconut whip cream.
