This Cardamom Date Walnut Granola is gluten-free, vegan, and delicious! It's easy to make but packed with flavour. Perfect with non-dairy milk or yohgurt!

Ingredients
  • 2 cups rolled oats (gluten-free if needed)
  • 1 cup walnut pieces
  • 6 medjool dates, chopped (about 2/3 cup)
  • 1 1/2 tsp ground cardamom
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
Instructions
  1. Preheat the oven to 350 degrees Farenheit and line a baking sheet with parchment paper.

  2. Combine the oats, walnuts, dates, cardamom, cinnamon, and salt in a medium sized bowl. Note: the dates are sticky and can be annoying to chop up. Tossing the chopped up pieces in the oat mix covers them a bit, and help you pull apart the pieces that stuck together.

  3. Add the melted coconut oil and maple syrup. Stir well, ensuring everything is evenly covered.

  4. Place granola on the parchment lined baking sheet. Place on the middle rack of your oven and bake for 22 minutes, removing it from the oven halway to stir.

  5. Let the granola cool completely on the baking sheet before you touch it.

  6. When it's cool, store the granola in an airtight container.
