Chocolate Orange Biscotti
Ingredients
  • 2 tbsp ground flaxseed
  • 1/3 cup orange juice
  • 1 tbsp orange zest
  • 3/4 cup sugar
  • 1/2 cup oil (vegetable or canola)
  • 2 tsp vanilla extract
  • 1 3/4 cups Bob's All Purpose Gluten Free Flour
  • 1/4 cup cornstarch or arrowroot
  • 2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.

  2. In a mixing bowl, combine the flaxseed, orange juice, and orange zest. Let sit for a couple minutes.

  3. Add in the sugar, oil and extracts. Mix well.

  4. Add in the flour, cornstarch, baking powder, salt, and xanthan gum. Fold in the chocolate chips.

  5. This dough is stickier than the other two, so wet your hands a little bit and shape into a log (12 x 3 inches) on a parchment lined baking sheet.

  6. Bake for 30 minutes. Remove from the oven and let the log cool for another 30 minutes.

  7. Turn the oven up to 375 degrees. 

  8. Cut the bicotti into 1/2 to 1 inch thick biscotti. Use a large knife and try and cut them in one motion - the dough will be very crumbly, so be careful! Bake on the cut side for 8 minutes, then flip and bake for another 8 minutes.

  9. Bake on the cut side for 8 minutes, then flip and bake for another 8 minutes. Let cool completely and enjoy!
