Classic Potato Salad

This is a vegan take on a classic, simple, and delicious potato salad.

Servings: 8
Ingredients
  • 4 cups baby potatoes
  • 1 cup vegan mayo, recipe below
  • 1 cup yellow onions, diced
  • 1/2 cup dill pickles, diced
  • 1/2 cup celery, diced
  • 2 tbsp fresh dill, chopped
  • salt and pepper, to taste
Instructions
  1. Boil the baby potatoes until cooked. Run under cold water and let cool. 

  2. Chop the potatoes in half.

  3. Combine the vegan mayo, onion, dill pickles, celery, fresh dill, salt, and pepper in a later bowl.

  4. Mix in the potatoes.

  5. Keep cool until ready to serve.
